What the grammar is used here? I could imagine that it is a participle or gerund. In particularly, why does the speaker use don't in this structure?

No, she doesn't say that. She says:
"And before you know it, we're looking back, going (saying) 'Gosh! There was this time, when ... '".
The idiom "before you know it" is used when something happens so quickly.
