Are both 'versatile experiences' and 'versatile experience' proper English phrases?
My friend told me only the latter is correct. Is that right?

I think you need to give us some context here. At the moment, I can't think of a suitable example for either.
 
I agree. I can't think of how an experience can be versatile. Are you sure you've chosen the correct word?
 
Experience cannot be versatile.
Varied experience makes a person versatile.
