You evidently don't know my nephew's fiancee — but while I agree male is more likely, it's not a bad idea to leave both options open. :)

Can I say the hills plunge into the water?
 
Yes, indeed you can. You understand that this usage would be a bit poetic -- florid I'd call it. It's perfectly correct, just not what an ordinary person would normally say.
