[Vocabulary] do you usually order meat, fish or vegetarian?

It's not "center around". That has a different meaning.

"Vegetarians" come in the same variety of (delicious!*) flavors in American usage as in British. Without further qualification, a vegetarian is understood as someone who forgoes meat and possibly eggs.

Just to clarify, vegetarians do not eat meat (white or red), fish, seafood, gelatine, cochineal/carmine - basically any food which is directly taken from or consists of a dead animal.

Vegans do not eat meat (white or red), fish, seafood, gelatine, cochineal/carmine, dairy products, eggs, and honey, and do not use silk, leather or wool, nor drink wine/beer which has been filtered with non-vegetarian "finings" (usually swim bladders of fish). Basically, they do not eat/wear/use any product which has involved the use of an animal in its production.

There are a couple of recent additional "labels":
Pescatarian - someone who doesn't eat meat or poultry but does eat fish/seafood.
Flexitarian - someone who ensures that they have at least one or two days a week on which they eat no meat or fish.
