Would you try.........?

I found it in the book 'Speak Now' by Jack C. Richards & David Bohkle.

They introduced this structure to ask for someone's opinion.

Does 'Would you try surfing?' mean 'What do you think of surfing?' or just 'Do you like to try surfing'?
 
No, it is asking whether surfing is a possibility for you when it comes to hobbies or activities.
For example,
If you are looking for a new hobby, would you try/consider surfing?
 
Jack: Would you like to try surfing?
Mack: I am fine with watching.
Jack: Are you sure?
Mack: I am quite sure.

(Mack is not a good swimmer, and he is not fond of sharks.)
