"I used to throw great parties at my place back home. I wish you could have been there." Normally we say " I wish you had been there." Is it OK with "I wish you could have been there."?

Come on. ostap. You are asking us to do your thinking for you.

With #1. the fact is: you were not there; the wish is that you had been there.
With #2..... ?
