Is it correct to say "which breed is your dog" or "which breed is he or she"?
 
Is it correct to say "What breed is your dog" or "What breed is it"?
It depends on the context. If you simply want to know a dog's breed, use which.

If there is a set of dogs you're choosing from, then which is correct. Example:

- Me: I'm entering my dog in a show for poodles, malamutes, and chihuahuas.

- You: Which breed is your dog?​

I named a list of breeds. You asked me to tell you which of the three my dog is.

Okay when there are multiple dogs "which" is correct otherwise "what" is correct. Am I correct?
 
Okay when there is a defined group of dogs, "which" is correct, and otherwise "what" is correct. Am I correct?
When there is a specific set of dogs, use which: Example.

- Me: The dogs in the dog park are having a lot of fun.

- You: Yes, mine is having a great time.

- Me: Which one is yours?​

Otherwise, use what.

He or she is not natural. Use it.

Mind your commas.
