I would like to ask if I can write as:

- When having done my homework, I will send an email to you.

I think you can and you can also say "When done with my homework, I will send an email to you."

Try:

When I'm done with my homework, I'll send you an email.

I'd say, "After I've done my homework ... " or "When I've finished my homework ..."
And you could say (though I wouldn't advise it), "After having done my home work ..."

 
I wonder whether it is grammatical to say 'Having done my homework, I'll email you', but I am not a teacher.
 
It's grammatical, but not colloquial.
