Welcome to the forum, Victor1992. :-D

'She stopped talking to me' means she didn't want to be my friend any more.
'She stopped to talk to me' means she stopped whatever she was doing and started to talk to me.

Please ask the other unrelated questions in separate threads with a title specific to each — such as She saw the cat eat/eating a mouse.

By "difference in the concepts" do you mean "difference in meaning"?

a) She stopped talking to me.

She was talking to me. Then she stopped. Now she's not talking to me.

Punctuate the ends of all sentences.

She stopped to talk to me.

She stopped. Why did she stop? To talk to me.

b) She saw the cat eat a mouse.

The cat ate all of the mouse.

She saw the cat eating a mouse.

The cat was eating the mouse. The mouse was not completely eaten.

c) I think Star Wars is great.

Capitalize the word I.

Capitalize and italicize names of movies, books, plays, newspapers, magazines, music albums, and TV shows.

I am thinking of seeing the new Star Wars film.
I'm sure you'll enjoy it!
