To have an ear for something is to have a (normally natural but also acquired) ability to recognize or reproduce sounds.
This is usually used when talking about music or language.
 
Being sensitive to the tone of language is important- to pick up on nuances like how strongly someone feels about something, which may not be expressed directly in business writing.
