What do you call a fruit that isnt ready to eat?

What do you call a fruit that is not ready to eat? For example, "A banana that is still virgin is green colored and not ready to eat". Is the word "virgin" acceptable? I think it sounds a bit weird and improper.

Meanwhile, what do you call a fruit that is ready to eat? Example sentence, "That banana is matured and ready to eat" Is the word "mature" acceptable?
 
Green can also be used in some contexts. I wouldn't use it with bananas because there are green bananas in some countries that are ripe and don't turn yellow.
 
If it's ready to eat, it's ripe. If it's not ready to eat, it's unripe.

What about for apple, oranges and other fruits? Example sentence : "Hey, that grape isnt ripe yet."
 
As Piscean said, if it's ripe it's ready to eat and if it's unripe it's not.
 
We can also say "not ripe".
