Is it correct to say the following?

1) We take a blanket while sleeping.

2) We cover ourself with a blanket while sleeping.

1. No. You could only take a blanket while you're asleep if you're sleepwalking.
2. If, while you are asleep, you pull a blanket over yourself, yes.

I think what you're trying to say is "We sleep under a blanket".

I don't understand your first suggestion.

Do I need to say "I need a blanket because I might cover myself with it while sleeping"?

If we are just under a blanket or quilt then do we need to say "We need a blanket to sit under while chit chating"?
 
In this context, take means "bring". You take/bring something with you when you're going somewhere. It's the wrong verb to use in your sentence.

You could possibly say you need a blanket to sit under while chit-chatting.
