Is it more proper to use the un shorten forms of don't, doesn't, can't and it's, when writing an essay or school paper?

This depends entirely on what your teachers expect. When I was at school, many years ago, it was absolutely unacceptable to use contractions. Nowadays, contracted forms are becoming more and more acceptable. However, if your teachers do not accept them, then you have your answer.
