[Grammar] "The" vs. "These" beginning a sentence

I am in a debate with a co-worker to determine whether it is appropriate to begin a sentence with "These" rather than "The" when referring to a collective set of documets or items?

Both are possible but, depending on the context, one may be more appropriate.
