"The popularity of different beer styles" means "the popularity of Lager, the popularity of Pale Ale, the popularity of Pilsner, the popularity of Wheat beer, the popularity of Brown Ale, the popularity of stout, the popularity of India Pale Ale, and the popularity of Porter.
Is "popularity" singular in form but plural in meaning?

It's a bit of a stretch to say it 'means' that. If you insist on a paraphrase, 'How popular different beer styles are' would be closer.

The noun 'popularity' is non-count.
