The more....the better

I can't decide how to make up a sentence with the more......the better. Could you please tell me which one is correct?

1- The more difficult the topic that you speak on is the better it is for your English.

2- The more difficult the topic is that you speak on, the better it is for your English.
 
They are both acceptable although the first needs a comma after "is". However, fewer words would be better. Try this:

The more difficult the topic of your speech, the more your English will benefit.
 
Is it true, though?
 
I'll also point out that the verb (is) is not necessary in the first clause. In fact, its omission brings a helpful economy to the phrase as a whole.

The more difficult the topic that you speak on, the better it is for your English.
