What does the bold part mean?



The inertia assumed by some plants in conditions unfavourable to growth
 
What's the rest of the sentence? As it stands, it's incomplete. Always give us full sentences to consider.
 
Dictionary definitions are usually incomplete sentences. The one you posted is something like "rigor: a state of rigidity assumed by some animals in reaction to sudden shock". You could make this a proper sentence by replacing the colon with a verb, adding quotation marks, and adding a period ("full stop" in British English) at the end: "Rigor" means a state of rigidity assumed by some animals in reaction to sudden shock.
 
In future, please post the entire dictionary entry (and a link, if possible) so that we know that's the context in which you saw it.
