We can say “It was a busy day.” I’d like to know if we can also say “The day was busy.”
 
"It was a busy day" is a way of saying "I was busy that day". So it's not really the day that was busy.
 
A: What’s your new job like?
B: Some days are busy, some days are not.
(By me)

Does B’s response make sense?
 
In that context, yes.
