Probably "censorship", but "banning" might be OK in certain contexts.

"Censorship" has a wider range of meanings. It can involve insisting that certain passages are changed or deleted before publication, or making a proviso that it not be sold to children, etc.
"Censoring" is also the process of deciding what is acceptable. In some countries, all books are censored before publication (they are checked), but not all are banned.
