She had a stubborn chin that she tended to lift when
making a point

1. Stubborn chin - is it chin (an element of the body), or "stubborn chin" is the all phrase desribing stubbornness?

I believe that you are correct. It is said that a person sticks out his/her chin when angry or when making a point. The same could be said about being stubborn.

No. If I tell you that the world is round, I am making a point. Also, if I prove to you that two plus two is four, I am making a point. This term is used when you want to say that something was clearly described. As a example, "I want to make a point that the rent is due on the first Saturday of the month".
 
This might be a good time to mention one of Shaw's irregular verbs:

I am firm;

You are stubborn;

He is a pig-headed fool. :)
 
and one more question - if a stubborn chin is about an element of the body, then what that adjective ''stubborn" means here? something similar to protruding ​chin? thanks
 
:up: It is protruding, which invites the speculation that s/he may be stubborn (habitually) or being stubborn (one time).
