Hi there,
I'm looking for an adjective or noun for the feeling we have on the skin (especially hands) after something sweet dries/(dries up?) on it, for example after touching some honey or jam. We say something like, 'my hands are ....'.

Thanks a lot.

"Sticky"

 With some sorts of stickiness you can also use the word tacky, but that tends to be a stickiness that you want: 'Allow the glue to get tacky before you bring the broken edges together.'

Can we possibly use the word 'gooey' in this case? Like the following sentenves:

I've just had some honey and my fingers are (feel) a bit gooey!
The honey jar is a bit gooey on the outside!

You could. There are lots of words you could use (see thesaurus entry for 'sticky'), but the overwhelmingly likely answer is "sticky".
