Anyone tells me which expression is correct?

in the soil science
in the soil sciences
in the soil or sand science
in the soil or sand sciences

In my opinion, "science" is normally used as singular.

Welcome to the forum.

It is always difficult for us to comment on any phrase or fragment without some context, preferably the entire sentence in which the fragment will be used. If there is more than one branch of science concerning soil, then there are probably "soil sciences". However, again, without knowing how you wish to use the phrase, we can't answer your question. Please give us more information.

Thanks for your suggestions.
Here I give some sentences:
Researchers have compared different expressions used in soil science.
This expression has been widely used in soil or sand science.
