Are these good? Which one is better?

1. "You are finished, you know that?" he said sarcastically. She held his gaze, fighting the impulse to slap him.

2. "You are finished, you know that?" he said sarcastically. She held his gaze, resisting the temptation to slap him.

3. "You are finished, you know that?" he said sarcastically. She held his gaze, fighting the urge to slap him.

I think you could use either one or three. (I prefer one.)

There are a couple of reasons not to use the second one. One, we don't normally think of hitting someone as a temptation. Two, temptation and anger don't go together.
 
The rather formal "You are finished" doesn't fit with the informal "you know that?" Use the contraction "You're" at the start.
