I am doing a fellowship abroad as research assistant.
In short, I got a grant by my government for woking for a foreign think thank.
Could I say "I am working as research assistant fellowoship?

Could I say "I am working as a research assistant [STRIKE]fellowoship[/STRIKE] fellowship?

Note my corrections above.

No, you would just say "I am working as a research assistant". Does anyone need to know where the funding came from? If they do, you could perhaps say "I am a fellowship-funded research assistant".
 
I admit that "I am doing a fellowship" is extremely weird to me. I even googled "doing a fellowship" but it was helpless.
