If you would like this done, with Reed-Kellogg, it is quite easy. "During" is a preposition; "interview is the object of the that preposition and modified by a second prepositional phrase; and "had been...observing" is a verb phrase -- past perfect tense, progressive form.

If you wish, I will do this as a Youtube video; but, really, it is quite simple.

Sentence analysis is slightly easier if you start with the correctly punctuated and capitalised version:

During his brief interview with Mr F[STRIKE]r[/STRIKE]ogg, Passepartout had been carefully observing him.

The main clause, which I have coloured blue, now becomes apparent, as does the verb, underlined, and its subject, italicised.
