If there are some little cards in an envelope and I want my friend to take one out, can I say "Pick one up?"

Take one (out) or choose one.

If you wanted your friend to go to the office supply store and buy you a packet of little cards, you might say "Pick one up". Or "pick some up", if you were thinking of cards as plural.
