Can you help me with how to use “not my type”?
A) Dresses are not my type.
B) Wearing dresses is not my type.
Are the the two sentences both correct?

No. Use 'style', not 'type'.

I should use the word “style” in both sentences?
Or just one of them?

Both.

I just saw a sentence “ School dances are not my type.” Is “type” the wrong word to use in it? How can I tell the difference?

Where did you see that sentence? It's not natural for me. I'd expect "... not my thing/bag". (Note that "not my bag" is practically slang.)

When we use "[not] my type", we're usually talking about people that we are romantically attracted to.

He asked me out on a date but he's not my type.
I really wish she was interested in me. She's just my type!

What if I use the word “taste”? Are the following sentences correct?
A) Dresses are not my taste.
B) Wearing dresses is not my taste.

No.
…. not to my taste.

Are the following sentences correct?
A) Dresses are not my cup of tea.
B) Wearing dresses is not my cup of tea.
C) Dresses are not to my taste.
D) Wearing dresses is not to my taste.

They're all grammatically correct but I don't really find any of them particularly natural.
