Hi there!
Whic sentence is correct?
1- Angels are neither male nor female.
2- Angels are neither males nor females.
What are male and female? Either they are nouns or adjectives?

I would use the adjectives male/female. The words can be both nouns and adjectives. ;-)

but, isn't "angels" in the plural?

shouldn't it be "males/females" in order to match the plural?

Not when they're adjective, which have no plural in English:
One male worker
Two male workers
;-)
