This "leap" is translated as "flow down", while I think it means "jump up", which doesn't seem to make sense here.

It's meaning is closer to "jump out/down".

Hi,

It is the water (of the waterfall) that "leaps" (=jumps) from the mountain to the canyon. Of course, it is just a stylistic concession, since water cannot, of its own will, jump.
