It's a dummy pronoun. "It didn't matter about that 'open relationship'" = what we'd agreed about that "open relationship" didn't matter.
 
Do you understand the meaning of the sentence?
 
I think it is a relationship that is out in the open (opposite of private), which the people associated with them know.
 
It means the relationship is non-exclusive; the partners say they won't mind if the other has sexual relations with other people.

You have to understand what an open relationship is to understand that sentence. Even though they had an open relationship, when he saw her "kissing that guy in the kitchen" he still got jealous.
