Is it accurate to call this 'hiking trainer'? I noticed the website selling these used the term 'hiking shoe', but I was wondering if it's correct to call them 'hiking trainers'.

In the UK, they're generally called walking shoes. That differentiates them from walking boots/hiking boots, which have higher tops. We usually use the word "trainer" ("sneaker" in AmE) for shoes designed for sport rather than hiking.
