(as a turtle) I love to swim in the water, so please don't forget to change the water for me every day.

Should I keep the word "the" before both "in the water" and "change the water"?
 
Yes.
 
I wouldn't open with "As a turtle". I'd use "I'm a turtle so/and ...".
You can (and should, in my opinion) remove "in the water". You don't need it with "swim". It's implicit in the verb and the fact that you're talking about a turtle that you mean in water.
I'd change "the water for me" to "my water" or just "the water".

In short, here's what I'd write (if I were a talking/writing turtle):

I'm a turtle and I love to swim, so please don't forget to change my water every day.
