[Grammar] In summer or summers?

Hey everyone,

which one is correct?

In summer, In the summer or In summers

According to my knowledge, all of the above have been used seemingly. But I am not sure which one is grammatically correct? If each is fine, could you please present any differences between them?

In summers:cross:
 
We do use "summers", but not after "in".

Summers in Greece are very hot.
The last few summers have been very dry.
