"In 2002, although people in Turkey and Ireland used 32.14% and 28.91% of their budgets respectively to buy food/drinks/tobacco, those in the other countries used much lower percentages, with consumers in Spain, Italy, and Sweden spending 18.80%, 16.36%, and 15.77% of their money respectively on that category of goods."

1) Can I use percentage as a countable noun, that is, is it correct to say "percentages"?

2) Did I use 'respectively' correctly?
