What should I say "I work night shift" or "I work night shifts"?
 
What should I say - "I work the night shift" or "I work night shifts"?

With my correction, you can use either of them.
 
AmE: Your first example would be heard/used most often.
 
In colloquial BrE you would be most likely to say "I work nights".
 
And there could be a difference in meaning.

"I work the night shift" suggests to me that you work every night. You don't work during the day.
"I work night shifts" suggests that sometimes you work during the day but occasionally you work nights.
