1) I will beat him in bench press.

2) I will defeat him in squats.

Are these correct? Do we need to say "In" here?
 
Take "in" out and what do you have?

1. I will lift more than him.
2. I will do more squats than him.
 
It's common amongst weightlifters to use the verb 'bench' to refer to doing bench presses. Similarly, 'squat' is used as a verb as well.

I can bench 400 lbs., and squat 880 lbs.*

Therefore, I'd simply say 'I will out-bench/out-squat him'. If context makes it clear you're only referring to one specific exercise, then simply 'out-lift'.
