c. I went happily for a swim yesterday.

Are all of them acceptable? or which sentence sounds more natural?

Why are 1. and 2. natural sentences, but 3. I went for a swim yesterday happy is not a natural sentence?

It is if it is describing the mood you were in when you went swimming. Happily would suggest that going swimming did not make you unhappy or made you happy. However, c) is more possible than very logical.
