1) I set off on my bike unsteadily/ steadily. (Is there such a word as steadily/ unsteadily? I can't seem to find them on dictionary).

2) The lady can carry the basket on her head steadily.

3) He guided/ directed me to his home over the phone when I was lost.

Yes steadily/unsteadily are words. What is your questions for the others?

 - although 2 is unlikely. More likekly would be something like 'The lady can carry the basket on her head confidently' or 'The lady can carry the basket on her head without wobbling'.
