Is the phrase "I feel grateful for having been given this opportunity" grammatically correct? What is the most natural way to express this thought?

Is it strictly better to say "I feel grateful for being given this opportunity" or, perhaps, simply "I feel grateful to have this opportunity"? Or do these all express slightly different things?

That sentence is perfectly good. It does seem a bit formal as if it is part of a speech. (It probably is.)

Yes, there are other ways to say it.

They express slightly different things. The perfect aspect of having been given makes it clear that the giving was in the past, looked at retrospectively.
