Hello, I need help on writing a formal apology letter to my so called "A.P Stats" teacher. I am still enrolled in her class, but I have not done any of her summer work. I didn't have access to the right technology to complete her assignments.I would of thought she would drop me out of her class by now but I guess not. I would still be interested to participate in her class if she gave me a chance.

We don't write letters for people, but if you make your own effort and post it here, someone may have time to check it for you.
 
It might be of some interest to learners to note that the OP (a native English speaker) made THE classic error of writing "I would of thought" instead of the correct "I would have thought". Other than standard and common misspellings of various words, this is one of the most common errors in both spoken and written English by native speakers.
