[Grammar] going sailing / doing some sailing

Regarding activities ( climbing,hiking,skiing,windsurfing), I'd like to know whether we can say go or do.
To me it sounds both are correct usage, however, we're guided by our books to use solely the verb go. :?:

It depends on the context, as usual.

'I'm going sailing (I haven't gone yet) and Martin's on the piste doing some skiing (he's there now)'.
