Great meals fade in reflection. Everything else gains. You know why? Because it's only food.

What does "fade in reflection" mean?

Source: Glengarry Glen Ross (a 1992 American drama film adapted by David Mamet from his 1984 Pulitzer Prize–winning play of the same name, and directed by James Foley)

It possibly means "When you think back on them (reflection) they don't seem as extraordinary (they fade). Over time, the memory of a great meal fades."

Yeah, but it's wrong- the great ones don't fade.
