1) They did everything they could to have their child eat any fruits, but he only eats apples, pears and apricots.
2) They struggled to have their child eat any fruit, but he never eats fruits or vegetables.

Are these sentences correct?
 
Yes, but they don't seem very natural. Perhaps:

They tried to get their child to eat all kinds of fruit, but he only eats, apples, pears and apricots.

Or:

They tried to get their child to eat any kind of fruit, but he won't eat fruits or vegetables.
