Crazy capitalization question!

I am designing a book for a therapist who developed an "End Childhood Defiance" program. In the program he has three levels: red, yellow, and green. Throughout the book he capitalizes each of these words as if it's a proper noun (ie: Put the child on Red for twenty-four hours, and then back to Green). He does the same thing with his 3 concepts of simple, respect, and consistent (ie: The three concepts are Simple, Respect, and Consistent.) Is it correct to capitalize these words? He plans on going to press next week. I'd like to advise him correctly. Thank you.
