Mumtaz Mahal was only one of Shah Jahan's wives, but he liked her the most. After Mumtaz Mahal died, the Shah built for her the Taj MaHal, a beautiful building made of white marble and covered by a white round roof.

In the last sentence, I wonder if it’s better to replace the “by” with a “with”.
 
No, it isn't.
 
It would, however, sound more natural to native speakers' ears these days if it used the modern order of adjectives: "... covered by a round, white roof."
