Harvesting fish and other sea food isn’t bad for the ocean, but harvesting it faster than it can replenish is.
(an extract from Studio Classroom)

Since the word replenish is a verb that needs an object, would it be more appropriate to say ‘but harvesting it faster than it can be replenished is’?

I wouldn't use it as an intransitive verb myself but the dictionaries I consulted say it's okay. I prefer your version.
 
I don't agree it needs an object. It sounds fine to me.
