like "to have the opportunity to take a first look at the blog's first post," as opposed to "to have the opportunity of taking a first look at the blog's first post."

Your first example is fine.
 
You can also use two infinitives in a row where appropriate. I'm going to try to think of some examples:
"You have to work to make money."
"I had to swim to save the drowning man."
"You have to want to teach to make any difference."
